i keep getting this burnt shit on my carbon steel pan when sauteing. needs to be scraped off.too high temp? too low temp? too much mixing? not enough mixing? i've been sauteing vegetables.

It's uneven as fuck and parts of it get stripped almost every time I cook with it, but as long as those spots even have the thinnest layer to keep it from rusting I don't care. I have no problem using soap and water to get grimy bits off, and I nuke the whole thing with vinegar every few months.
