Usually the temperature is too high and they lose their non-stick capabilities due to tiny residue being stuck on top of the non stick material. And sice you can't really full blast scrub clean them without coating coming off they get worse and worse. >>22107192you don't need to season cast iron, in fact they're extremely easy to take care of. temperature control has a bit of a learning curve but it's really not that hard. and you will be a better cook by learning temp control anyway.
