You need more than one vermicelli for it to be a “vermicelli bowl”. But nice. I’ve been packing the same for lunches. This is the lemongrass chicken one, but I usually do baked tofu instead (it’s just easier). Pic is old, the veg I do now is green onion, mint, cilantro, carrot, daikon, cucumber, peanuts, and jalapeño. Sauced with nuoc cham. Scrummy.

Do you know how to make that sweet dipping sauce I always get with this dish at Viet places? I get (small) hints of fish sauce, and also what I assume to be some kind of of sweet chili jelly mixed in.
