How big a factor is the bun in börgarcraft? 50% of the game? More or less?

Important but less so than the meat or toppings. A great patty with delicious fillings can carry a subpar bun, but a great bun absolutely cannot save a bad patty or toppings.

More than you'd think. Burgers can get pretty greasy and juicy so you need something that is able to hold up both, on top of the other toppings.
Right now I'm using these but surely there has to be something better out there. I heard martin's potato rolls were the best but I was honestly extremely disappointed, their smaller size makes them a pain to actually use. It couldn't hold up to a chopped cheese either but honestly that might be on me, I wasn't aware how much fat would render on 80/20 beef when cooked that way.

It's a useless comparison because replacing any aspect of a burger, from the bun to the patties to the toppings with a raw corn stalk would ruin it. Such a scenario would give no useful information on the importance of any aspect of the burger, which was the question.
The question is whether the difference between a good and bad bun is as important as the difference between a good and bad patty or good and bad toppings. Replacing ingredients for entirely unrelated things instead of arguing for the importance of their quality is fucking retarded and probably you know that. Well, maybe you know that.
