Because our body is actually prepared for it.
It does not just taste sweet, it has many different effects. It delivers chemical energy and is half made out of THE energy carrier glucose.
Evolution happened together with it so our body has specific protocols for it. As soon as it tastes sweetness it prepares for the incoming sugar, sending out a small amount of insulin to inform the liver that outside sugar is coming and it should therefore stop synthezising glucose for now.
All those artificial sweeteners are made with one goal: To deliver sweetness WITHOUT calories or a lot less of them, usually through a lot higher sweetness, so a few mg already are enough. Because if you developed an artificial one that had the same sweetness and still 4 kcal/g - why not just use sugar?
Because of it having sweetness 1 it can actually also fulfill a very important role as structural agent. Just think about how much sugar is in a cake, that is not just for sweetness, its mass plays a very important part in the molecular mixture, stabilizing it and adding mass to it. You cannot just remove 300g of sugar and replace it with < 500mg of sth else of the same sweetness, that leads to the mass missing support, only with the best modern food technology can offer can you then Frankenstein sth halfway similar together.
Nothing has the same chemical properties, as sugar, only in right dosage the same SWEETNESS, but sugar does MORE than just making things sweet. That's why they simply cannot replace it.

In biochemistry the most simple compound of a type is usually the one that is preferred to more complex things.
Sure you can make complex sweet tasting things but less complex things are better.
And also in contrast to things like aspartame it has a nutritional value
