Because its the ideal disaccharide for sweetness, one where Glucose and Fructose which already are good sweeteners but have specific tastes are combined. In biochemistry the most simple compound of a type is usually the one that is preferred to more complex things. Sure you can make complex sweet tasting things but less complex things are better.And also in contrast to things like aspartame it has a nutritional value
