Pancake expert here. I've made all kinds of pancakes from chiffon to crepes. The pancakes in ops picture are what jiffy or other complete box mix pancakes look like. Basically, these are the laziest way to make pancakes. You buy a complete mix, add water, and then drop in an oiled pan. Compared to putting effort into pancakes with wet ingredients and adding shit to make them light and fluffy, these pancakes are sad and you can taste the minimal effort that went into making them. Anyways, light and fluffy chiffon(not the Japanese way) pancakes with fresh whipped cream and a homemade fruit syrup are the absolute best pancakes you can have. I will be making a big batch soon just to spite the OOP in picrel, and it will be cheaper. The, and see you next time.

Buttermilk pancakes. Separate the egg white from the yolk. Mix the white with the buttermilk and mix the yolk with the melted butter. THEN you can mix them all together and put over the dry ingredients. This will prevent some of the gluten from forming and make for a fluffy pancake.

Not really. But I can give you an ingredient list. I know what the batter should look like at the end, so I can adjust the ingredients up or down on the fly to change yield.
AP Flour
Buttermilk
Water as needed
Eggs, yolks and whites separated, whites beaten to stiff peaks
Melted butter
Vanilla extract
Sugar
Salt
Baking powder
Baking soda
Start with 2.5 cups flour, 1 cup buttermilk, half cup melted butter. Add all the dry ingredients together. Add the wet ingredients minus the butter and the whites. Mix wet and dry, fold together with a spatula, don't whisk. When all incorporated add butter. Batter should be thick but airy and shiny. Finally fold in your beaten egg whites. Start makin' cakes. I use a 5oz ladle. 1 scoop is 1 cake.

It's less about the batter, though, and more about the surface. I use picrel. Lodge 10.5" round cast iron griddle. You want to let it come up to temp real low and slow to really let it heat soak. Then turn it up to med low when you're about to start jammin' out flapjacks. Pour your batter on with no grease whatsoever on the griddle. The only fat used should be in the batter. You'll be tempted to touch it. Don't. Let it cook. The upside will start forming bubbles. Once the outer edge is visibly set, but themiddle is still bubbling, slide your metal spatula around the edge of the cake between it and the pan. It should slide under freely. When you're sure the cake is free, flip. It will immediately puff up to about 1/2" thick or more. Cook another 30 to 60 seconds and it's done.

I'll post a batter img next so you can see what it should look like.
