When I was a grad student, my university admitted far more students than it had the infrastructure to handle so the only lunch line that weren't 30+ minutes were the food trucks. I ate a lot of lamb gyros and chicken gyros. Even back then I thought it was overpriced compared to a restaurant.

I live near NYU and there are a ton of food trucks during the school year. There's a pasta one, "Mexiperuvian", a couple of Chinese ones, halal trucks, etc. They seem pretty busy. There used to be one that did really good teriyaki but I haven't seen it this year
