Not the Malaysian ones (they're often on the savory and sweet side, like prawn sambal, anchovies sambal etc with bigger fresh red chilli peppers and dried chilli flake / flesh, blended smooth and the paste goes back into the pan again to be sauteed until the oil separates and water evaporates and the paste gets thicker). But the Indonesian ones with more small red or green bird's eye chilis toasted with tomatoes and some other aromatics and then roughly hand pasted with the mortar and eaten fresh, without going back into the pan. I think they call it sambal tomat (tomato) for the red one and sambal ijo (green) for the green one. They usually pair these two pastes as condiments when ordering Ayam Penyet dish.

I did the blazing challenge at BWW a while back. Easily one of my biggest regrets. I'm convinced the real reason they make you sign a waiver is because speed-eating a bone-in chicken wing every 30 seconds is a fucking choking hazard. And there is no boneless option. Did a hot ones challenge for a buddy's 25th birthday. We all took turns asking him questions from his childhood while we ate alongside him. Genuinely a lot of fun. Da Bomb is every bit as bad as the show advertises. Pure spice, zero flavor.
