The guy in OP's pic is only 20. Dunno about the rest of his lifestyle but he seems pretty aged for 20. Also doing that is only really possible because modern flour is enriched with extra nutrients during processing.

People do overestimate a bit how much protein you really need though, thinking they need to eat like bodybuilders on steroids. And also blaming carbs overall for everything instead of ultraprocessed junk food in general.

Lots of white flour and cheese is kind of inherently unhealthy. If you used whole grain pasta and a lighter bechamel with only a little cheese for flavor it would be an improvement for healthiness I think.

Of course fren. I don't measure a whole lot outside of baking so I'll do my best

White flour pasta has most of the nutrition removed. Cheese has a fair amount of nutrients but it's still processed and things in milk are lost when turning it into cheese. You could eat a reasonable amount of it and be okay but they're not really ideal foods to eat large amounts of all the time.
