At what temperature difference should you remove steak from heat? I noticed the last time I made steak trying to grill it to the temperature I wanted to hit resulted in it getting more well done than I intended after I had taken it off the heat so...like 10 degrees before it hits the desired temp?

I fucked up a tri tip this last weekend. Pull off early if you're unsure is what I'd say. Also don't fully cover when resting. It came out too well done for me. I'm a steak amateur though but just my recent experience.
