To answer your question though, take the time to make some meals that are good to freeze and use those on days you don’t feel like cooking.

I think that issue runs a little deeper than just being about cooking, man. You need to cut out the drinking first of all, it's only going to make whatever the problem is worse. And then you need to confront whatever is making you so depressed.
But when it comes to cooking, other anon's suggestion to prepare and freeze food is good. On the days you can muster up energy, just try to prepare as much food as you can and you'll have it ready to go.
My other suggestion would be to try and find an angle that makes cooking fun for you. If you just treat it like a chore that has to be completed, it's going to be difficult when you are already sapped of energy. Try to find something about it that can excite you. If you're somebody driven by self improvement, then set a goal to get really good at certain cooking skills. If you are interested in culture, then explore that through different cuisines. Or maybe the novelty of experimenting with unique ingredients and seasonal produce could do something for you. I don't think just finding a way to put less effort into cooking is necessarily the answer, although it could help on some days when you are truly drained. But I think for it to be sustainable you have to find something within cooking that gives you energy.

well it's flatbread, so it's just bread and water and salt mixed into a fairly wet dough
add a pinch of yeast if you want
knead it or whatever until it stops acting like glue (lmao that's never gonna happen unless you have the gene)
let it proof for like idfk 30 min-1 hour beforehand? you're just gonna roll it out into a circle so it doesn't need to be that poofy
