I imagine it could work with a sweet and sour type soup/stew. Though, admittedly, I don't think I've ever heard of a sweet and sour stew.
Maybe the problem is it being too sweet in a soup.
Yeah, on second thought, it will probably not work in a liquidy dish.

I used to go to a Thai restaurant that had a red curry duck that had pineapple in it, in addition to green peppers, pea pods, broccoli, and bamboo shoots. It was my favorite dish. Then, a new manager came in with a new chef and, instead, the red curry came with corn, carrots, and celery (they kept the bamboo shoots).

Also Malaysia and Indonesia, they use a lot of pineapple.
I was addicted to a pineapple curry dish in Malaysia called "Nanas Pajeri"
It was grilled pineapple with coconut milk, chilli, tamarind and curry spices.
They have a lot of sweet, sour, hot soups and curries over there that use pineapple

I do a few European-y things with juiced pineapple and some of the pulp that comes from that.
1) pineapple mustard gravy for ham. I simmer a sachet of clove in roux-thickened pineapple juice then remove the pouch and add mustard. Delicious, but the gravy doesn't pair well with anything but stuffing/zsemlegombócok (stuffing balls). The roux is compounded with pineapple.
2) reduction for roast chicken or pork. I deglaze the roasting pan with a mix of pineapple juice and the dryest wine I've got at the time (red or white doesn't much matter to me here; just whatever we've got open and haven't finished). Pineapple pulp is added to the pan as the juice and wine reduce.
3) pesce in agrodolce con ananas. Fry some unbattered fish and dress it with a vinegary pineapple sauce. To steer it towards med flavours and away from the new world and orient, I flavour it heavily with wine vinegar, capers, anchovy, raisin and pine nuts with a bit of the pineapple pulp. If the juice is particularly aggressive, oil cured olives, too, but I've got to be careful on salt.

To be clear, I flavour the juice with stock cube. Forgot to mention that. Ham stock cube, specifically.
