Tabasco, it has more vinegar to contrast with the alkaline butter and egg. Its also an American made hot sauce not imported from mexico. I also just don't like the taste of cholula for some reason. It always has that... off taste to it.

Or Asian cooking putting various vinegars on rice and other dishes? How about malt vinegar on fish and fries? I like Valentina Black label, but without the vinegar it doesn't complement eggs at all.
