I have the same problem with Cholula that I have with Valentina: they're overpowering. I'd probably like it squirted onto some heavily-topped nachos, where it can mix with a bunch of other flavors, but on a simple omelet, no. Then you just get an egg-textured slab of hot sauce.

I hate how common Tabasco is at restaurants because it sucks. I'm glad it's becoming more common for them to have Cholula as another option because at least it's something even if it's not as good as Tapatio (although one time I went to a restaurant and they did have Tapatio so that was awesome). I just go sauceless if Tabasco is the only option.

Yeah that's the point. An acid compliments other foods to enhance the flavor. Do you think limes get squeezed over rice, fajitas, and other Mexican cooking just for the lime flavor? Or Asian cooking putting various vinegars on rice and other dishes? How about malt vinegar on fish and fries?

I like Valentina Black label, but without the vinegar it doesn't complement eggs at all. It's great on a taco with a reasonable balance of acid already on it.

Maybe acids are a bit beyond ck's palette?
