So far I'm mostly making dutch oven breads. Nothing complicated, just stretch and folds and shit like that. Have tried a few french breads with poolish and steam that worked out pretty well. As I get better at baking, what are some other breads I should try making? Are ciabattas as difficult as they say? I do have a stand mixer btw, if that matters.
