What do you like to make in your pressure cookers, /ck/?

I'm doing a beef stew next but Birria was my favorite thing I did in it yet. Flan was easy in it too.

Like last thread said, stock is a good one, whatever you're wanting to call it now. I like roasts and their derivatives because they're fast and almost as good as a crock pot/low oven. Also soups.

It's way better than normal steamed broccoli, it's incredible what pressure can do

I have one from the 60's that's pure metal
it has a pressure relief valve that you put a weight on (which has three divots that fit over the valve - 5, 10, 15) to keep it from spraying hot steam, and you tighten the lid down (which has a bunch of flanges that hook onto the pot) with a bunch of bakelite nuts that screw onto pivoting bolts
there's a dial on the lid that shows the pressure

Set it to the saute setting and brown your chicken then remove then brown the veggies on the same mode then add the chicken back and all the other chili stuff and set to slow cook or whatever. You can easily do it but these things have too many buttons. The saute setting is what's nice

Yeah, next payday. I have everything I need minus the pressure cooker so I'll be alright. But I'll get a couple so so I won't be stuck with a shitty smelly plastic gasket again. It's been at least a year, I just went and sniffed and it's still there. I had the lid sitting diagonal to the bin, wasn't even sealed for a year.

How would you compare pot roasts in a pressure cooker vs a crock pot? I have both, but have only done roasts in the crock pot.

Everything is more tender and sweeter and more intense (maintain the pressure bellow the pressure regulator fully opening and use natural release or it will get dry) but less caramelised (not not at all). Kind of starts tasting like it came from a can which is what happens inside them.. They get pressure cooked.
You can slow cook in a stove-top pressure cooker (cover it with a towel) till morning by heating all the contents inside and taking it off of the heat. Haven't used my Dutch ovens since I got several pressure cookers.

Doesn't that turn it to mush? If I go even a minute or two over on boiling broc it turns to mush.
