As a Brit, I would eat this but not enough bean sauce for the rice and I would like a bit more avocado.

Cornbread I get but surely it's only good for mopping up juices but like I said earlier, the rice needs that.

The bread thing is an arepa, maize flour like the type they use for tortillas, and filled with cheese. And a side of fried plantain is very common in Colombian dishes but it's not very good, gets fried until it's rock hard and barely has any flavor. Same thing with avocado, they call it palta, it's much bigger than regular avocados but much harder and with even less flavor.

Looks absolutely delicious. I never would have thought to combine beans and rice with sausage and eggs, but just thinking about it is making me hungry. Do I have to go to Colombia to get one of these, or can they be found in other places?

I'm with this guy. Fresh off the skillet from a street cart in a cold, misty Colombian morning? Perfect food. The sad, lukewarm lumps they serve at sit down restaurants that barely have any cheese inside get a test bite at best.

That's only for green plantains which generally aren't great in my opinion no matter how they're prepared, like you said it's like a bland hard potato that's also kind of astringent. OP's pic looks like it has sweet plantains though which are good, just like a cooked sweet banana.
