It's in a condo complex, and I was a renter too for a long time so I guess I'm scum huh. When I was in another building of close to 1000 people we had one incident in about 20 years where someone started a fire with their stove. The building I bought into, there was a serious fire a few years back because of someone falling asleep with a candle, that caused some water damage to the unit below. But people getting blown up by gas stoves is not something that happens under ordinary conditions. I'm more worried about ebikes, to be honest famalam.

Yeah I was told I should "just get a guy to go there and replace the igniter" and I'm like ok, sure, let me pay some handyman to go inspect the stove, order the wrong part, come back 2 weeks later and have to fix it again when it turns out it wasn't the correct part, repeat 4 or 5 times until I've spent $2500 and the stove still looks old and low-rent

I've seen enough with other people dealing with appliance repair handymen to know it's a money pit, the only real repair method that works is trash the old appliance and install a new one, with labor costs being what they are it just makes sense

Don't get me wrong, I think people should get paid well, and I have no qualms about paying a skilled tradesman his worth. But the whole gas appliance shakedown is an obnoxious mafia grift. What happened was a while back some idiot got in a fight with the city or something and DIY'd a gas hookup and killed some people. And then the burned site was left to rot and became a breeding ground for rats which grew unchecked, and a colony of aggressive super-rats formed and attacked a pretty young white woman and now it's everyone's problem. So because of that anyone who so much as breathes on a gas appliance now legally has to be a licensed master plumber, a dues paying member of the UAW, *and* be a member of one of the Five Families so even the slightest bit of maintenance is a massive PITA and if you try to cheat the Dept of Buildings will make an example of you and you end up in Sing-Sing. So it's now cheaper and less of a headache just to toss your stove in the trash.

I'd go to a gas stove in a heartbeat if I already had gas lines in my walls. However, my home heats with oil and all I've got is electrical wiring. Running gas pipes is wildly more expensive than running electrical.

We do a LOT of cooking on our induction. We did a lot of cooking on our electric too though. You use what you have.

Induction is the worst because it creates a hot spot. It can warp pans it is so bad.

Electric is the second worst because it heats just the bottom of the pan.

Gas is the best because it heats the whole pan including the sides, as hot air rises.

Man I wish I could get a new stove, I fucking hate mine, it's a downdraft unit (and has to be with the way the kitchen is laid out) and when you turn the fan on it pulls the flame to the side and steals a bunch of heat so water will never boil etc. There are barely any options for downdraft too so I'm not sure I could replace it with anything better unless we did a whole kitchen remodel, which isn't in the cards.

I don't have much choice, the smoke detector is right at the peak of the vaulted ceiling and is ridiculously sensitive, it'll go off just from cooking bacon even with no visible smoke unless the fan is on. Tinfoil would probably stop it from being effective enough too. I'd switch to induction just to get rid of that flame problem but nobody seems to make a full slide-in downdraft one, only cooktops.
