Bread and butter are equal partners in the equation, and neither should be neglected. They should both be of good quality because this is a meal of just the two parts. The bread should be slightly warm but not too hot so as to immediately melt the butter, because that diminishes the butter's texture and by extension its flavor when you eat it. The butter should be room temp because that is when the flavor comes out the best, and ideally cultured as any table butter ought to be.

I'm reminded that this site still does some things right.

Who makes their own butter here? I do a big batch once a year or so and freeze individual portions to retrieve for when I'm in the mood.

I've never done kefir, I'll try that next time. I've done with plain greek yogurt and skyr to similar results. I imagine kefir would give a more distinct flavor.

Yeah a little funkier in a good way. Kefir has yeasts and a more complex bacterial profile than commercial yogurts. I was using raw milk as well.
The other thing that changes flavor is fat content during fermentation. Culture reacts differently in a high fat low lactose cream. Since I use a cream seperator I can get super high fat % cream. Solid or near solid at room temp type thick.
It made a cultured butter that tasted like white chocolate/cocoa butter. Incredible for honey butter toast and other sweet things, but not so good for just simple butter + salt toast and other savory applications.
Using a standard single cream and letting it get nicely tangy makes a butter that's better for savory things like a classic european style cultured butter.

It doesn't work as efficiently with already seperated cream, and cleanup is kind of painful. You also need to heat the milk to around 100 degrees to efficiently seperate the cream.

Usually I wait until I have around 8-9 gallons of milk and seperate it all at once. Takes maybe 1.5 hours to heat the milk and seperate.
The chinese ones work fine, but you need to be careful to not run them too fast or they'll start throwing skim in your cream channel. I paid 165 for a 100L/hour one. I would say it was doing maybe half that.
