>>22123099something like wrights or beelers, or if you have good grocery stores the store brand stuff that is packed like wrights is good. it should be thick but not stiff, not overly red, but light pinkish, with a light smoke flavor that is not oversalted. it should look something like this, and most of the better brands pack the bacon like this. if you can find a cherrywood smoked that is my favorite.
