You can soak it in hot water with some dish soap for a bit if you got caked on shit to loosen it up to wipe it out with a dish scrubber. Or you can just boil some water in it for the same effect if you wanna be autistic. Same prinicple as deglazing fond.

Not better, useful for different things. Realistically you need one 10" and 8" of both cast iron and carbon steel, and one 10" stainless pan for acidics. Those are all the pans you will ever need, and they will last your entire life. I've had the same lodge cast iron pans since I got my first place at 19. That was in 1995.

Then the world moved to cast aluminium but turns out it's poison.

True, if they think cast iron pans are the second coming then they're probably a cooklet midwit. They have barely any uses besides cooking steak or frying potatoes. A good stainless is infinitely more useful and easier to cook with.

The only thing you really need to know about cast iron as a noob is the way it heats. It is very very heavy and therefore takes quite a bit longer to get up to temp. But once it does, it stays much hotter much longer than others. So it's easy to get surprised with sudden burning. Once it comes up to temp, lower the heat by a solid amount to keep things where you need it.

Literally takes me under a minute to clean mine, sorry you are retarded. You only need to season it once if you got an old unused pan that needs to be restored. All cast irons come pre-seasoned.
