Refried Bean Burritosmakes enough for 8 small burritos or 6 biguns1 pound dry pinto beans, inspected/rinsed (I found a rock before, be careful)1 yellow onion, diced8 oz bacon (raw weight), well-cooked and chopped fine2 tbsp rendered bacon fat OR lard OR butter if you must5 cloves garlic, minced OR 1 tsp garlic powder4 cups chicken broth (regular sodium)2 cups water1/2 cup salsa (hot is better, adjust amount to taste)1 tsp cumin powder1/3 tsp paprika1 tsp kosher salt2 tbsp dried oreganoSaute onion in bacon fat until translucent. Add garlic+spices+herbs and cook for another minute or two. Deglaze with salsa. Add bacon, beans, broth, and water. Cook until beans are tender and skins are starting to come off. Takes ~2h in my old-school pressure cooker, watch water level for regular cooking. You can add all kinds of shit to this. It was amazing with 3-4 chipotles+adobo. I add smoked paprika sometimes. Takes ~5 minutes to refry and make a burrito.To refry: heat ~1 tbsp of bacon fat/lard in a nonstick/cast iron pan, add beans, stir, mash to desired consistency (I use the back of my wooden spoon for personal batches, potato masher for large ones), cook until it starts to clump (can leave them soupy to use as a side dish too). Add more salsa if you want. Make the rest of the fucking burrito. A good tortilla goes a long way.
