Why the fuck are my homemade bean and cheese burritos so bland compared to actual restaurants? It's beans, cheese, and tortilla right?
>>
>>22126791
probably because you just straight up suck
>>
How did you eat them? If you didn't cram them you probably lost a lot of flavor that way
>>
where's the lard?

you forgot the secret ingredient
>>
>>22126799
I’ve never once seen a fellow patron cram a burrito up their ass at my local bean and cheese spot. So I’m inclined to believe you are pulling some sort of prank on the Food & Cooking board. After all we’ve done for you…

Diced onions, red enchilada/burrito sauce
>>
>>22126868
I considered the onions but that seemed counter productive, but the sauce is a good idea i think. Saw it on the grocery shelf and left it.
>>
>>22126791
It's how you cook and flavor the beans. I recommend looking up the most basic Mexican methods for cooking pinto and/or black beans. Oh, and use dried beans.

>onion
>counterproductive

Do you just hate flavor?
>>
>>22126810
Damn good idea actually, I did try MSG and it helped a bit, but I suppose I gotta make it all from scratch. hardly seems worth it at that point but im hoping they freeze well.
>>
>>22126791
Msg. They add msg. And a lot of it.
>>
>>22126791
Lard, MSG, etc. Get a clue.

Make these and all of your bean burrito problems will be solved.

Refried Bean Burritos
makes enough for 8 small burritos or 6 biguns

1 pound dry pinto beans, inspected/rinsed (I found a rock before, be careful)
1 yellow onion, diced
8 oz bacon (raw weight), well-cooked and chopped fine
2 tbsp rendered bacon fat OR lard OR butter if you must
5 cloves garlic, minced OR 1 tsp garlic powder
4 cups chicken broth (regular sodium)
2 cups water
1/2 cup salsa (hot is better, adjust amount to taste)
1 tsp cumin powder
1/3 tsp paprika
1 tsp kosher salt
2 tbsp dried oregano

Saute onion in bacon fat until translucent. Add garlic+spices+herbs and cook for another minute or two. Deglaze with salsa. Add bacon, beans, broth, and water. Cook until beans are tender and skins are starting to come off. Takes ~2h in my old-school pressure cooker, watch water level for regular cooking. You can add all kinds of shit to this. It was amazing with 3-4 chipotles+adobo. I add smoked paprika sometimes. Takes ~5 minutes to refry and make a burrito.

To refry: heat ~1 tbsp of bacon fat/lard in a nonstick/cast iron pan, add beans, stir, mash to desired consistency (I use the back of my wooden spoon for personal batches, potato masher for large ones), cook until it starts to clump (can leave them soupy to use as a side dish too). Add more salsa if you want. Make the rest of the fucking burrito. A good tortilla goes a long way.

Either everyone in the world is baiting about not being able to cook simple bean burritos or everyone is retarded
>>
shallow deep fry your burrito
>>
Are your homemade beans refried? Did you add MSG or an ingredient with MSG?
>>
>>22127012
I'm vegetarian. Do you have a vegetarian recipe. Also I'm scared of pressure cookers and refuse to allow one in my home so do you have a recipe for regular pots? And I'm not a fan of refried bean texture.
>>
>>22127032
Just leave the bacon out and use veggie stock

lard is the correct answer
>>
>>22127367
*and it should be in the tortilla too (they are easy as fuck to make)
>>
>>22126878
if you own a blender your can easily make an incredibly flavorful red sauce with some dried peppers
>>
