You can tailor your media landscape to be better by every metric if you are equipped to navigate it. If you want old television-cook style channels you can find them. If you want long-form discussions and tech demos of classic written recipes you can find those. The problem here is that you are tech illiterate. The fact that you don't even know how to operate an ad blocker tells me your opinion of youtube is worthless.

I disagree.
TV chefs when they first arrived were almost revolutionary to many. Even the likes of Fanny Craddock and the Galloping Gourmet showed many boomers that food needn't be the same as they were taught by their parents. Then later came the likes of Keith Floyd, MPW, etc. who took things further.

TV Chefs certainly played their part and as an older GenX - I am grateful for them . . . . .I won't say my mother was the best cook ever but she at least experimented and gave everything a go.

Today it's down to internet 'Chefs' and there is an awful amount of chaff to separate from the wheat but if you look can can find some good ones.
American 'chefs' I ignore, they just don't have it and I think they are more concerned with views rather than the food.

Something can be better than what was before it without being good or without being worse than what comes after. Even for people so dogmatically stuck in their ways about tv being the best, consider that you can watch all of Iron Chef Japan on youtube instead of catching 1-2 old reruns on the food network at any one time or having to record it on the spot, or Tivo it and wait for episodes to air. You can do this with lots of old media, certainly the media people would argue was the best of its time. If it was decent then it's probably archived somewhere, which means I can seek out and have better access to the tv content that was worth a shit.

if you like britbong food, Backyard Chef and John Kirkwood but honestly I just watch them because I like listening to their accents. These are the only cooks worth watching because they're not just trying to sell you gimmicks or on personality, they put out solid recipes and technique. There's lots of entertaining youtuber cooks, but these are the only ones that feel like their recipes deliver and I would follow. Just in your pick, max, guga, joshua, uncle roger are all complete hacks. Nick is somewhat legit but I've only ever seen his short form content which is by definition a gimmick.

I like Jason Farmer, he tries to recreate iconic take out dishes with ingredients you can normally get from the store. His most recent videos hes been talking more about applying cooking technique to dishes.

Also youtube is great because it forces chefs to show their knifework, mommy blog recipes dont show knifework. If you're watching a video and their knifework sucks ass you can go ahead and ignore their recipe.

Almost all the online recipes I ever copied came from either Chef John or Kenji.
Chef John taught me most core cooking techniques and knife skills back in my early adulthood. A lot of his dishes remained main stays in my rotations. All of his stews are amazing.
Kenji taught me to approximate all my measurements and not autistically rely on measuring cups / spoons since all of his written recipes are paywalled behind websites or cook books and he himself doesn't measure anything in his videos. It was annoying at first but really it's freeing.
