Stainless steel is based and I regret also buying carbon which was 2x the price

that's the whole point of stainless steel pans
pour a reasonable amount of cold water on it and nothing happens
boil caustic or acidic items inside and nothing happens

You won't have this problem if you wait a few seconds for the oil to heat up before cracking eggs
