Equal parts by weight evaporated milk and cheddar, add about 2/3 as much by weight american cheese, can be any kind: Velveeta, Kraft singles, whatever (this is where the sodium citrate comes from). I microwave in short increments and stir, but you could do it on the stove or use a double boiler I guess. Once it's melted and homogenous, add milk to get to the consistency you want, go a little at a time.
