1 lb ground beef
1 egg
1 c parmesan cheese
1 c plain bread crumbs
1 tbsp italian seasoning
1 tsp salt
1 tsp ground pepper
3 cloves minced garlic
1 jar of marinara sauce

set a pot with marinara sauce on the stove at medium heat, set a pan with oil on the stove at medium-high heat
combine dry ingredients, add meat, garlic and egg, mix together by hand
when ingredients are fully combined, begin rolling 1" balls of meat and drop into frying pan, turning the balls occasionally until the outside is browned
by the time the pan is mostly full the first meatballs are ready to remove and drop into the sauce. the balls will still be raw on the inside
when all meatballs have been browned and put into sauce, let them cook in sauce for 30 minutes while making noodles

my grocery store has this "meatloaf mix" of ground beef, pork, and veal that I use for meatballs. if you can't get that 1:1 beef and pork is ok too. I mix it up with an egg, some grated parmesan, breadcrumbs, garlic powder, onion powder, red pepper, salt, black pepper, msg, and oregano.

Frikadellen:
1 kg half pork, half beef mince
1 medium large finely diced onion
4 slices of blended fresh white bread
2 medium-large eggs
12 g salt
2 g black pepper
2 g white pepper
1 g mace
1 g ginger
0,5 g cardamom
0,5 g allspice
0,3 g coriander
2 g paprika
15 g chopped parsley

Add eggs to a bowl, stir in the spices, add the mince and ruffly knead, add onion and the bread and knead again but not too much. Form slightly flat balls weighing 80-100 g each and fry in clarified butter.
Blended fresh white bread results in the fluffiest texture and gives the perfect moisture so the frikadelles aren't too dry or too juicy. You also shouldn't knead too much so the texture doesn't turn almost sausage like and dense. If you use bread crumps add some water and let them soak before. Soaked stale bread is the worst option as you wont get it as homogeneous as the other options and it's a mess. Milk has no advantage in both dried options in my experience.
For the spices you could leave out a few like cardamom or coriander. But at least use pepper and mace (or at least nutmeg as a substitute if you can't get mace), ginger and allspice.

Every christmas I just toss a bag of meatballs, a whole bottle of grape jelly and a whole bottle of heinz chili sauce in a slow cooker. Its one of my favorite christmas dishes.

Whatever you do, take the time to brown and partially cook the meatballs, before throwing them in the sauce for the final cooking - it makes a real difference.
