I tried making fig ice cream and it always comes out disgusting after putting it in the freezer.First attempt:Made the ice cream base as usual and mixed in fig jam.Tasted before putting in the freezer and it tasted good.After freezing it tasted extremely bad, I couldn't get the taste out of my head. I had to throw it out.Attempt two:Made the usual ice cream base.Use fresh figs, scooped out the insides and mixed with the base.Before freezing it didn't have much fig flavor, tasted mostly like vanilla.After freezing it tasted gross, not as gross as the first attempt, but definitely inedible.I wasn't the only that tried the ice cream so I know it's not just me.Other ice cream that I make using the same base (including fruit ones) taste fine.Am I missing something about figs and freezing?

Are u removing the skins? Thats where all the bitter tannins are rightSo with time they leech out. Ice crystals probably help separate flavonoids intensifying bitterness
