Weighing things can just be more convenient. Weighing flour is faster than the scoop and scrape you're supposed to do. Weighing oil directly into a mixing bowl is faster than using a measuring cup and then having to scrape it out. And it's definitely easier if you're having to measure things like peanut butter.
