The greatness of french cuisine come from its versatility. Maybe Italy makes the best cheese, Germany the best bread abd Hungary the best stew but France does everything right. It have both strong high standard and everyday food and the variety of climate and culture inside France itself allow a great difference of influences.

I was on a ferry in Greece one time and at the canteen they had "Chinese" food--basically just something equivalent to stir fry--cooked by French chefs, I suppose to appeal to Chinese tourists. It was absolutely dogshit, they had no idea how to cook Chinese food, like super saucy and kind of thin sauce too, and it seemed like everything had been simmered rather than cooked rapidly in the traditional style. The europeans of course didn't know any better.I was pretty disappointed by French cuisine when I actually got to France, the street food was not nearly as good as the taco trucks in LA, ramen shops in Tokyo, or Cubanos in Havana. I was a broke backpacker back then so I couldn't afford more than like one decent meal, but even that wasn't great. I've had better french food back home, but I also grew up in a city with a huge french expat population, right nearby a traditional french bakery, so maybe I was spoiled. But I just don't get it: I can literally walk into a great meal in LA or Tokyo. Even in the Medditeranean, like Spain, Italy, Greece, most restaurants are good, if not great. I don't get the hype. Perhaps 40 years ago France still had great food, I don't think so anymore.
