Not really. Cold brew == less coffee flavor is drawn out of the beans. You miss the bitter flavors that make a bad coffee taste bad but you also miss the good flavors in expensive coffee.

The only specific flavour that comes through in Cold Brew is "burnt". Everything else, unless you're an autistic hypertaster, will taste similar.
This means that the best coffee to make cold brew with is the cheapest per weight medium roast, and keep an eye out for pre-ground going on special at a lower price than beans.

If I was spending $1400 on a grinder, I wouldn't be running $60 blendy mazzer 33m burrs in it. I'd be putting in $200 SSP HUs. Its just a big ask when you could run HUs in a cheaper DF64 and get 95% of the way there for <half. But if you've got the money go for it. I almost hopped on the first preorder back when we didn't know if it was vaporware or not.

Regardless you're going to have to do s o m e maintenance eventually. 6 screws and you've got a completely "new" cleaned grinder. That being said I've got a Wug2 83a that I haven't bothered buying any other burrs for and don't clean that often.

The only good manual grinder on the market that holds 60g of coffee is the Lido OG. All other good manual grinders max out around 25g-35g so you're going to be grinding in two doses at least. That ceving grinder is a white label piece of shit. If you're dead set on a cheap manual just get one of the cheaper Timemore or 1zpresso grinders like the C3 or Q which are good enough for all around usage. Personally I think the Eureka Peppe is perfect for your use case. It's only $10 more than the Encore but the internals are light commercial spec. The brew burrs perform very well for non espresso usage and the espresso burrs are great for traditional shots.

A DF54 would compliment a bambino well. The stock 54mm and 64mm burrs perform more or less the same, or at least very very similarly. So there's no real point it spending more on a DF64 if you're just going to keep the stock burrs in it. Also using the stock burrs would probably be a better choice for your use case as the blendiness will help cover up off flavors that are usually present in commodity beans.

Many ways to skin the cat. The Pulsar mini and Z1 are great for 10g doses. The Sworks 32mm step down baskets can be jerry rigged into an OXO rapid brewer. But 30 degree conicals are just simple and work well. You can use the dedicated filters or just fold a standard 60 degree filter in half.

a drip assist tool like the melodrip (or even just pouring over an overturned spoon) can help reduce agitation and let you grind finer
ime single pours work best with finer grinds; in your situation it would probably just reduce the extraction further and make the cup even more boring

The opening at the bottom of the Funnex is only about 3/4" diameter, much smaller than the opening in the 3 cup Chemex so much less of the filter pokes out, making it slower and almost zero bypass. Whereas the Deep27 is maximum bypass and maximum speed. With Sibarist fast papers it's arguably the fastest brewer on the market. i was dialing in espresso and didnt want to throw out what i ground so i just put it in a jar for later
then the next day i wanted a pour over and didnt feel like grinding so i used some.
not bad.
it would never work in a v60 though
i think the high bypass helps it work with a huge range of grind sizes

I personally enjoy it. With lighter roasts it gives a lot of sweetness with that heavy, slightly muddy body of hot chocolate. With darker roasts it gives a heavy bitterness but the cup is still enjoyable in a way. It's a nice contrast from the light and delicate apple juice style cups that everyone seems to be doing nowadays.

Just got some Mocaccino from some machine. Disgustingly bitter, I can't taste anything. Even with extra sugar as an option. I had to put like three sugar packets. I wanted four but there weren't any left.

"blooming" refers to pouring just a little hot (but not boiling) on the ground beans before brewing. it does science stuff to make coffee taste more better.
put your grounds in a heatproof glass thingamajig and pour just enough hot water on them so theyre all wet but not submerged, like you're watering a plant. let it sit for like 30 to 45 seconds. then take that and proceed with the cold brew process as normal.
this is opposed to the normal method where people just grind coffee and put it straight into cold water with no bloom. if you bloom it first it can give it a better body and a little more sweetness, i have found.

Keurig Cups have to use 2 grind types to modulate the flow through of the water, part fine, part not fine. Bloom it doing the same bimodal grind(s), but bracketing your cold brew grind settings slightly biasing the coarser end. Look up the ratios on the K-Cups (which escapes me rn) and do something similar-ish. Also bloom at whatever the proper temperature is for the beans' roast. Darks have to be far lower, and little agitation; stir the fuck out of the mediums and lights blooming those little shits. Good luck.
