God damn, I can't believe what I've been missing. I've always tried cooking chicken breast in a pan on the stove because that's just how I cook 99% of the time and never fuck with the oven. It always turns out just ok at best. Today I baked a chicken breast for the first time and it was the easiest thing I've ever done and it was the best chicken breast I've ever had. Seasoned it with Lowry's and some cajun seasoning, into a 400 degree oven until internal temp is somewhere between 155 and 160 (took mine about 25 minutes), rest for ten minutes, and easily the best chicken I've ever made at home. Perfectly cooked, juicy, tasted great.

What other secrets is the oven hiding from me?

Pan fried chicken breast is way better. Just flatten it out or butterfly it first so it cooks evenly on medium heat. That's all you have to do.

Bake whole unpeeled potatoes in the oven before turning them into mashed potatoes.
The secret of good mashed potatoes is low moisture. So this has much better results than cooking them.

The actual secret to good mashed potatoes is ricing them or passing them through a sieve. I've found little difference between oven cooked potatoes or boiled potatoes when making mash except boiling takes 15 minutes while roasting can take an hour plus.

The other guy is right. Cooking the potatoes in the oven for 1 h isn't better than just boiling them for 20 minutes. Just cut them open so the steam can escape. If you use the right type of potato you can't get a difference.
Even French chefs like Escoffier or Bocuse who go the extra mile for every nuance just boil the potatoes for mash.

I prefer baked for mash. They absorb more butter and cream because they're drier than boiled. Cooking evolves over time and people learn better ways to do things. Acting like 19th century recipes are the end all be all of cooking is foolish.

The difference between baked and boiled mashed potatoes definitely exists. Baked potatoes have much less moisture than boiled potatoes. Of course that difference is going to affect the final product.
