How much denser will a half whole wheat half white Detroit pizza be? I want to get mine a little bit more dense, but I don't want it to be a total brick. I also want to eat more fiber. Anyone have experience mixing whole and white?

density is determined by the proofing and how you put it in the pan
use whatever flour you like and let it proof normally halfway, then throw it in whatever pan you are using and let it proof again
after that try to put a minimal amount of pressure on the dough to shape it/top it
