The breadcrumb coating ALWAYS comes off my chicken and remains in the oil and not on the chicken!!

do you have proper oil temp? thats very important for basically everything fried, if the oil isnt hot enough the dishes soak up the oil and get mushy (good way to identify a shitty fast food place, their fries are mushy)

At the risk of outing myself as retarded, this time, it was just marinating the chicken in buttermilk, then into breadcrumbs with paprika mixed in. But I've done it with flour, egg, etc, and it still fucks about.
I don't have a thermometer, it was hot, and the chicken was juicy though.
