The breadcrumb coating ALWAYS comes off my chicken and remains in the oil and not on the chicken!!What the fuck do I do?
>>22147865whats the recipe?do you have proper oil temp? thats very important for basically everything fried, if the oil isnt hot enough the dishes soak up the oil and get mushy (good way to identify a shitty fast food place, their fries are mushy)
>>22147865Allow the coating to dry on the chicken for a few minutes.
>>22147872At the risk of outing myself as retarded, this time, it was just marinating the chicken in buttermilk, then into breadcrumbs with paprika mixed in. But I've done it with flour, egg, etc, and it still fucks about.I don't have a thermometer, it was hot, and the chicken was juicy though.>>22147874Did :(
>>22147882get a thermometer then
Flour, then egg, the breadcrumbs. Shake off excess, fill the voids with more crumbs. Press on it, then into hot oil. Season your flour and eggs
>>22147865is that you jack?
>>22147865Meat juice leaking out sogging up the breading and cooling the oil. Also condensation from lid, use a mesh or foils with holes instead if you have to have the splash covered.
>>22147882>I don't have a thermometer, did you try thowing in a few crumbs and see if it sizzled?post breadcrumb pic
Add milk to the egg
>>22147865OP just look up the proper dredging process, make sure your oil is up to temp, you fucking piece of shit.
