I went to an "authentic" Mexican restaurant staffed and attended by Mexicans and it was genuinely awful. The blandest beans I've ever had, extremely thin salsa, meh tacos, weird textured rice.

most of the food I ate growing where creations straight from cookbooks like these. let's just say it was slightly better than starving considering my step mom would replace every fatty or sugary ingredients with low fat substitutes and splenda.

I hate my life so fucking much, I hate who I have become, I wanted to be an entomologist when I was a kid and thought tattoos were stupid. How did I get here? When will it end? I get regular cancer screenings, even had both an endoscopy and a colonoscopy this year and was disappointed, every time, that I'm not dying and have no reason to feel like shit all the time.

Growing up I always thought so many foods were inherently bad tasting. Dinner was never exciting and as I got older I started replacing every meal I could with McDonalds. I hated lamb, beef, any chicken that wasn't breast meat, rice, you name it... but I would have home-cooked meals at friends' houses and it was actually good. Took me a long time to realize that my mother was just a terrible cook. When I started cooking for myself that was the game changer. Mom even started getting jealous of me and telling me all my food was terrible and that I was doing everything wrong and she would even get mad at my sister for loving it when I cooked. The better I got, the more I would want her to taste what I made and she would outright refuse to even taste it. That was ages ago though and she eventually started hovering around the moment she saw that I was cooking, wanting to grab a plate asap.

She really was a bad cook though. Bad habits, bad preparation, gave no care or focus on what she was trying to make, no knowledge of fats or how to properly season... overcooked everything and baked the shit out of anything in the oven until it was dry and unpalatable.

My mother is a terrible cook but her father (my granddad) was an amazing cook.

The funny thing is that my mother has been cooking for much longer than him because he only started cooking when my grandmother died around the same time that I was born. Apparently he had never cooked a single thing in his life before then (he was in his 50s when my grandma died).
