the thing that elevates tacos is goat status is finely broken up ground beef. most people can’t be bothered so they are stuck eating mediocre ones.

no. soft flour tortillas are the way to go, preferably charred a bit on an open flame. the only thing bangin about this is the shotgun in your mouth after your taco shatters into a 1000 pieces

They make special tools to break up ground beef but I use a pastry scraper. Loud as hell but works great, just avoid use on nonstick pans.

Something store taco mix gets right is flour and water- you add the spices and flour to to the meat while its cooking (I do this after I cook it a bit so I can drain some fat and water from the pan) then cook it dry before adding water and sometimes some fat back. You are essentially making a spiced roux then deglazing the pan- the ground beef is served in its own light gravy.

This is where the stat that taco bell meat is only 50% meat- they are counting the gravy weight as not meat.

chop up garlic, onions (white)
fry till onions translucent, garlic browned
toss in meat
break it up, brown it, try to get nice crusty on bottom
wait till water cooks out
add 1 tbsp tomato paste, 1/2 can diced roasted tomatoes, chopped jalapeno, 1 can rinsed kidney beans or pinto
wait till water leaves
add 3 packs old el paso taco seasoning

trust me

>They make special tools to break up ground beef
This must be the most useless unitasker.
Use literally any kitchen utensil, preferably a wooden spoon.

I'd have to tell you exact measurements of spices and I cant because I eyeball it. So you are out of luck.

Today I mixed it up, put in more effort and fried some onions up with it, and used canned 'fire roasted tomatoes with green chilis' (usually I add ketchup) and overall I liked it better, however, I will try diced tomatoes next time.

It's ground beef, not rocket fuel. Just dump the spices, taste, and adjust.

>transluscent onions, to ensure they're not sweet
>browned garlic to ensure it's bitter
>meat after vegetables to ensure natural oil from the meat is on top of already earlier added oil to fry the veggies in, and not used TO fry the veggies on
>brown the meat with already browned garlic at the bottom, can't wait for that classic taco charcoal garlic bitter explosion crunch. remember that transluscent onion? well, now it's black, no need to thank me
>wait til water cooks out so it gets extra dry, just how I like it
>add some laughable amount of actually good stuff, don't spoil yourself
>wait til whatever moisture's left is gone, you dont want to miss the experience of choking on a pinto bean
>sprinkle dry seasoning on already finished meal to ensure it doesnt actually season the meat or anything, but you can feel it sticking to the roof of your mouth and anihilates whats left of your bruised tastebuds with raw unabsorbed salt

ok

A lot of cooks claim the secret ingredient for a great chilli or taco meat sauce is cocoa powder.
