I will now give my secret. Onion, tomato, garlic, red pepper, celery. Chop them up, and put them in a food processor and blitz them. Add it to some beef and make a loaf with salt, pepper and worstashire and 2 eggs. Use whatever binder you like (I like Italian breadcrumbs) and cook the meatloaf at 350 until its cooked through then coat it with half bbq sauce and half ketchup and hit the broiler until it crisps

This is my recipe based off of Alton Brown's. Try adding fine bits of red bell pepper to your meatloaf sometimes, it really adds a lot. 1.5 lb of ground beef is an annoying amount, but I was buying 3 lb packages. I should scale the recipe to either 1 lb or 2 lb.Meatloaf1.5 lb ground beef 80%3/4 cup finely chopped onion, caramelized in tallow (aim for 1/4 cup)1/2 red bell pepper finely chopped2 cloves garlic, minced1 strip of bacon, minced1/4 cup oatmeal1/4 cup breadcrumbs1/4 cup milk3 tb cup ketchup1 egg1 tb Worcestershire1 tb soy sauce1 3/4 ts kosher salt1/4 ts pepper1/4 ts sage1/2 ts thymeKnead until cohesive. Form into tall log on a baking sheet lined with non-stick foil.350F for 50-55 min, 160F internal tempTurn off oven, wait for 165Convection 30 min in to brown outsideApply glaze 15 min before finished cooking:2 tb packed brown sugar2 tb cider vinegar3 tb ketchup1/2 tb honey1/4 ts black pepper1/4 ts chili powder1/4 ts cuminPinch of saltHeat together in a sauce pan
