Salt will preserve meat, but you understand that that's far from the only harmless preservative, right? Wood smoke can preserve meat, so can exposure to cold, dry air (Icelandic harðfiskur is preserved in this way). Sugar can preserve things, as can vinegar and high temperatures. Lye, too. Don't delude yourself into thinking that "preservative" = "harmful, skin-dissolving chemical". That's like saying that organic stuff is healthier than than inorganic stuff, which ignores that water and salt are both inorganic and poison hemlock is organic.
