I'm "learning" how to cook, I just know the very basics.
In my family our diet consists mainly of green beans or chard, boiled with some carrots and tatos, then we have everything else too, but that is a constant

I'll give you a summary of my 1st week's diet for reference
>green beans the way I described above all days except 1, for dinner
>pasta with bolognese sauce, many days for lunch
>omelette 1 dinner
>lettuce tomato and onions, some nice olives (plus olive oil, vinegar and salt) 1 or 2 days as a side
>same as above but with tuna added in

and for this upcoming week (I accept and would welcome suggestions) and mostly based on what I have already bought
> chicken breasts (frozen, need to pull them out 1 day in advance to unfreeze then cook), I'll add some bbq sauce
>lentils, I just need to wash them and cook them in a pan with some onions, red pepper, a bit of tomato I guessa bit of garlic and chorizo
>fried egg with fried chorizo
>I'll have salads same way as described in the block above
>rice with tomato sauce and a fried egg

with each lunch/dinner I have a piece of fruit, now we have peaches, melon and some blueberries

OP, you got a lot to learn to say the least.
But here is a quick guide based on what you got:

Marinate it every single time.
A marinade doesn't have to be complex either, you can just use what you'll already be using for whatever you're cooking, and can be reused as sauce IF you heat it to a minimum of 165, which is hard not to do if you're simmering it down to a sauce anyways.

You can easily mix them with rice as well. Pretty good mix really.
Another option is to make some dressing and mix it with veggies, voila, you have a side salad or some topping in a sandwich.

Mayo, mustard (or lemon juice), garlic powder, salt, and black pepper, between to buns or slices of toast. If you want some greens, have some arugula or spinach in there too.

what I actually have in mind is to mix some kind of long cooked pork bits with it, but ever so slightly, that's how they did it in my school lunches and it was heavenly

Don't li.it yourself to cooking just for meals, try baking a loaf of bread.
Cook chicken breast, cool it down and slice it, use that for a salad, pasta dish or sandwiches.

Also get a slow cooker when starting.

Chicken breast aren't very flavorful so usually I'd use them for chicken parmesan, stir fry, chicken tacos/fajitas/burritos etc.

I would highly recommend learning to cook stuff like aglio olio, carbonara, cacio e pepe, limone etc etc. They're pretty much idiot proof and take at most 20 minutes to cook while also being very tasty. I found simple pasta dishes like these were a good way to gain confidence when I was first learning as a teen while also being great to have in your repitoire for whenever you're feeling lazy or running low on time but you still want a tasty meal.

Your idea sounds great, i definitely encourage you to give it a try.
I usually do garlic and a touch of either white wine or balsamic vinegar depending on what I’m eating them with.

sauce is:
