I'm trying to come up with ideas for a unique strawberry ice cream, but I'm coming up blank.
Any ideas, /ck/?

Strawberry balsamic.
I used to work at a fine dining restaurant where one of the desserts was vanilla bean ice cream in a big wine glass with strawberries and balsamic glaze drizzled over. Garnished tableside with black pepper.

It really worked. Could make a decent ice cream. Maybe make the balsamic syrup with equal parts port. Then fold in ribbons of it so it's not fully incorporated. Maybe omit the pepper too.

Some of these ideas are okay. really aren't.
Balsamic - never again
Goat cheese - I've thought about that option as well, but I've never had strawberries with goat cheese so I have a hard time imagining the taste
Bourbon - I thought about making a strawberry daiquiri, but it's just strawberry lime and rum.
Coconut - I've also thought of this, but I made mango coconut ice cream earlier this summer.
White miso - don't have any and can't find easily, also I don't think it'll work
Rose water - just did a sahlev ice cream
Roasted corn - won't work, I've made corn ice cream before and while the flavor was ok, it won't work with strawberry.
Pomegranate Molasses - don't have any and don't think I can buy it anywhere nearby, but molasses tends to have an overpowering flavor.
Earl Grey Tea - can't see it working
Lavender - might as well use basil, as it's a better pairing
Gorgonzola - no way the gorgonzola isn't overpowering the strawberries
Rhubarb/Elderflower liqueur - never had it.
Toasted Almond - just adding nuts doesn't make it good
Guava - Potentially good, but I don't really like guava.

Rhubarb goes very well with strawberry. Its very bitter raw so you have to cook it in a sugar syrup. But it’s very good, i think strawberry rhubarb jam swirl in a vanilla ice cream base sounds divine

strawberry ice cream with rhubarb swirl and graham cracker pieces.
The bright rhubarb perfectly cuts through the sweet strawberry ice cream, while the graham cracker bits add a the occasional bit of crunch. Since rhubarb is high in water as well as acidic, it needs to be prepped correctly to prevent a grainy, icy texture as well as to prevent curdling.

Simmer chopped rhubarb with sugar and a splash of water until it breaks down into a thick, smooth jam. As said, rhubarb has high water content, which will freeze into solid, tooth-shattering ice chunks so stir a tablespoon of corn syrup and/or a pinch of pectin into the jam. This keeps the swirl gooey and scoopable even when frozen. Cool completely in the fridge before swirling it into the ice cream there are worms in my brain; get them out.
I hate making them, but cooked custard ice creams (using egg yolks) handles fruit swirls better and resists curdling. If you use a fresh "Philadelphia-style" base (just cream, milk, fruit and sugar), ensure your strawberry puree is fully blended and chilled. Make sure the ice cream base is thoroughly chilled before churning.
Toss your crushed graham cracker chunks with a little melted butter and bake them for 5 minutes. This creates a fat barrier so they stay crunchy instead of getting soggy in the ice cream.
Churn your strawberry ice cream until it reaches a soft-serve consistency then follow your maker's instructions for adding swirls and chunks. Also, your mother is a whore.

I make strawberry ice cream using strawberries I grow in my garden and also add organic freeze dried ones that have been powered as well to the base.
The base is usually vanilla custard and sometimes I add biscuit I bake and break into chunks and dehydrate.

The problem with adding chunks of something like kiwi is that when it freezes it become icy which kinda ruins the whole texture, also I don't think I've ever had a kiwi that didn't just taste sour.

Yeah, I’d go full strawberry spumoni with it. Roast the strawberries first so you cook some of that water out and actually concentrate the flavor instead of ending up with some weak-ass pink ice cream. Do one layer roasted strawberry with a little vanilla and lemon zest, one layer pistachio mascarpone with real pistachio paste and toasted pistachios, and then a dark chocolate-orange layer with bittersweet chocolate and fresh orange zest. Fold some chopped Amarena cherries into the strawberry, keep the pistachio layer rich and slightly salty, and throw some little dark chocolate shards into the chocolate layer. Pack the whole thing into a loaf pan, freeze it solid, slice it like actual spumoni, and now you’ve got strawberry, cherry, pistachio, mascarpone, chocolate, and citrus all working together without turning it into some goofy novelty bullshit.
