“Non stick” does not exist. It is an illusion. There are some options that are less sticky but ultimately having your pan stick is not a material issue but a skill issue, due to oil and heat.

The BEST pans are stainless steel, which have their own quality gradient. The medium grade “all clad” are decent enough for any cook and last a lifetime with proper care

Cast irons are not bad but have pros and cons. A pro is heat retention. Also you do not need to be super gay with cast iron. I wash mine with soap when it needs it and don’t autistically season and they are fine. Anyone who claims they can crack an egg onto the pan with nothing on it and have nothing stick is lying, and you don’t need to do an hour long seasoning ritual to have a working pan. It’s fucking iron, it’s meant to get beat up a little

Pans treated with teflon/other PFAs are a last resort. I’m not super autisitc about this, I’ll use one sometimes, but they also are generally just cheaper quality than other pans, and I’m not incredibly fond of using too much because of what they are coated with. Tldr stop being gay about pans, stainless steel is still the best. Learn how to heat the pan and apply oil

See a piece of whatever it is that you didn't chop small enough in a rush? With cast iron I can take my steel spatula and just CUT IT RIGHT THERE IN THE PAN. Try that with your non-stick, lol.

There is no best pan. I will always take my cast iron for searing any kind of meat, every time. For this task, heat retention is king. I'll use stainless steel for simmering acidic sauces for hours, for this task, non-reactivity is king.

Doesn't matter how you cooked it, if you don't put it into constant motion your fried rice will be clumpy and wet instead of light and airy. And I suppose you could lamely try to do this with a nonstick pan and a plastic or wooden spatula but it's so much easier to move the pan with one hand and kind of chop and pull up on the rice with the other.

Okay, wash your rice, cook it properly, fluff it after cooking, and eat dinner. Put it in the fridge. Tomorrow morning saute some shallots in oil, then when they're almost done add garlic and right as that starts to get fragrant dump in your scrambled eggs and cook. Now goes in your rice, stir it around. If you made it properly in the first place it won't stick, either to the pan or to itself. Add your sauces and seasonings towards the end of cooking, along with any (already cooked, leftover) meat you intend to add. Mix thoroughly so all the rice gets coated. As things start to heat back up after you added the sauces/meat, add a drizzle of sesame oil, let it sizzle for just a little bit then plate, garnish with green onion.

Egg first is vastly superior, the only contest is a fried egg after as a topping on the rice. Cooking the egg at the same time as frying the rice is always sub-par.

This. I use my cast iron pans for deep frying shit. Regular frying (not necessarily deep frying) is enough to give them a thick coating that will last a lifetime. I clean them with a scrubber and dish soap and I have no problems

What's even the use case of cast iron? Stainless steel pans do almost everything cast iron does for me plus it heats quicker, and just less of a bitch to clean because it's light and doesn't need to be thoroughly dried.

Meanwhile cast iron sucks at a fuckload of things including any cooking with liquid, since it leeches the iron and carbon particles ruining the flavour and colour. It's worse if the liquid is acidic.

I can see it as a replacement for non-stick if you have a cast iron pan that has seen many seasons, but I don't see the use case of a brand new pan.
