Sausages are pretty notorious for having a high fat content and not disclosing it. The cheap ones are particularly high in fat for obvious reasons. You can get a good estimate for how lean the sausage mix is using a weight to protein ratio.

OP's Amazon Grocery sausages are ~50/50 meat to fat ratio. The Johnsonville ones are ~75/25.
