I've had some interesting results with them.Genuinely best pork loin I've ever made was sous vide, and might have been the best I've ever tasted. For nearly everything else though I've preferred smoking

Sous vide and reverse sear are both abysmal.The best sear is from drying the steak first overnight uncovered in a refrigerator or in front of a fan for 30-60minutes. Then pan fry or deep fry. Deep fry is obviously better but requires a lot more fat. When pan frying you can spoon the fat over the top of the steak.

I have done tallow deep fried steak, but if you combine it with sous vide the tallow has too low of a smoke point so you don't get a super sear. My method does just fine with sous vide. Flipping every 15-30 seconds produces a more even sear, and if you really want you can spoon the hot oil on the top of your steak to make an even more consistent and deep sear.
