I've seen recipes for things like vodka sauce using about 2-2.5 shots per serving without a long cook time. It won't get you drunk especially since it's mixed with food but it would be enough to still have an effect.

Outside of specific cases, alcohol is nearly always cooked out of food when it's used in meals. For every recipe that has a vodka sauce, you'll have 5 more that will involve reducing a wine before braising for a long time.
