The trick to peeling eggs is that the protein in the egg white has to harden properly. A freshly boiled egg is a little squishy. When the egg cools down the egg white firms up. You can't peel the egg because the membrane is attached to the egg white and when you rip it off it takes out chunks of the soft egg white. When the egg white is harder the membrane slides right off and the membrane will tear before the egg white.An ice bath works but so does just leaving the eggs out, or pop them in the freezer, or keep them in the fridge.Brainlets think it's about shocking the egg or some shit, like the ice bath is making the membrane retract or some shit. It's all about the firmness of the egg white. This is why your freshly boiled eggs always fuck up but easter eggs peel perfectly.

All of this guess work can be mitigated by simply steaming them instead of boiling them. Bring your water to a boil, add your steamer with your eggs, then dump them into an ice bath.
