the reason is you dropped them into cold water instead of boiling water because you were too much of a pussy

The trick to peeling eggs is that the protein in the egg white has to harden properly. A freshly boiled egg is a little squishy. When the egg cools down the egg white firms up. You can't peel the egg because the membrane is attached to the egg white and when you rip it off it takes out chunks of the soft egg white. When the egg white is harder the membrane slides right off and the membrane will tear before the egg white.
An ice bath works but so does just leaving the eggs out, or pop them in the freezer, or keep them in the fridge.
Brainlets think it's about shocking the egg or some shit, like the ice bath is making the membrane retract or some shit. It's all about the firmness of the egg white. This is why your freshly boiled eggs always fuck up but easter eggs peel perfectly.

Let the egg cool then peel it under running water. Perfect 1 piece peel every single time.

Unorthodox but that eggy bowl actually looks good

5-5-5 works 95% of the time for me. I don't bother with the ice bath, just cold water. Shells come off with no problem.

I have zero idea why this works but it works incredibly well.
>boil for 9 minutes
>transfer to bowl of regular water
>leave it in the fridge overnight
>put eggs into a contain with a small amount of water, less then 1/6th the height of eggs
>shake them against each other semi-lightly
Those fuckers strip like a nurse working her way through college. Never had much luck with the ice shock method.

>leave it in the fridge overnight
worst egg peeling hack i've ever heard, actually psychotic
>>
gotta put eggs into water that is already boiling
>>
>>22157849
>boil for 9 minutes
Stopped reading here. 7 minutes MAX, i'd even go as low as 5 minutes, 40 seconds.
>>
the heat of the eggs cooks the membrane
>>
Just don't boil fresh eggs. My mom always used to say that it's not about the cooking method but freshness. Wait for like 5 days after buying them and then cook, the shell will fall in huge chunks.
>>
>>22158146
i've heard that too but the biggest difference for me was just putting eggs in water that was already boiling vs starting them in cold water. eggs started in cold water would stick almost every time, if i boiled the water first it was like maybe 1/10 eggs had a tiny bit of sticking.
>>
>>22158151
this is my opinion too, nothing else that people talk about matters a tenth as much. I just "chilled" some boiled eggs in horrible nevada tap water that comes out of the faucet in August at like human body temperature, which they have to load with chlorine to keep from turning into sewage in the hot pipes, and they still peeled fine.
>>
>>22158271
*steam works about as well or better because it also creates a large temperature difference at the shell surface, even though steam has way less energy flux than water due to low density unless you're at pressurized temperatures

>boil

Stop boiling them. You’re never going to get consistent results.

The number of eggs will determine the drop in water temperature or the time it takes to bring it to a boil. Egg temperature will matter as well. The size of the pot will also affect the time it takes to bring to a boil if starting from cold, as will the amount of water (which is determined by the number of eggs).

All of this guess work can be mitigated by simply steaming them instead of boiling them. Bring your water to a boil, add your steamer with your eggs, then dump them into an ice bath.

The only variables when steaming are time and egg size.

I just air fry my eggs for 15 minutes.
It doesn’t always give me the best peels (about 50/50 on whether each egg peels well or not), but it is damn convenient.

peeled.
>>
>>22156793
Ok Im going to drop the fucking knowledge on you...If the egg doesnt peel right its because the eggs aren't fresh. As a Chef its important to know why this is happening and thats its not your fault. And How to fix it.
>>
>>22163656
Haven't tried verifying it experimentally but I always heard that older eggs peel easier because the membrane inside the shell shrinks as the egg loses moisture over time.
>>
>>22163070
nigga those are eggs
>>
>>22163656
older eggs peel easier
