Why are British chips so soggy and disgusting? Just like the UK, Australia loves chips. But our chips are different. Australian hot chips are thicker and larger than French fries, but we fry them until they are golden, crispy, and delicious.
On the other hand, British chips are extremely sad. They're soggy, mushy, and barely even look fried. A crispy Australian style chip with tomato sauce and chicken salt is infinitely better than a soggy, limp British chip drowned in vinegar and mushy peas.

Aussie chips are usually thinner than UK chips. Normally around 1cm x 1cm, closer to what Americans would call fries. (Not McDonald's fries.. more like KFC fries)
The UK seem to like chunkier chips, 2cm x 1cm or bigger. Closer to what we would call steak fries or wedges.
We have British and Irish Chippers in Australia and they usually hand-cut their chips and they are shorter and fatter than Aussie chips. Perhaps they use a different type of potato

Australians are British (t. Australian), but there are legitimate cultural differences. One of them is just that in the UK they genuinely prefer sloppy chips.
I found the same thing in South Africa. They literally call them "slap chips", which is pronounced like "slop" and means "limp". That's just the way they like them. They're as gross as you would expect, but they have a really nice kind of fish called snoek (rhymes with "book") which is full of bones and apparently parasites at the wrong time of year, but it tastes great.

The Australian preference for crispy chips might be a fairly recent thing. This is just anecdotal but I feel like all fish and chip shops had sloppy chips until maybe 2010, when some of the better ones started making more "pub style" chips. But maybe I was just going to bad fish and chip shops. I honestly can't even eat there any more, I feel horribly unwell every time afterwards and I don't know why.

The soggyness of chips in England is being exaggerated here. As a kid in the 90s, every fish and chip shop made chips like OP's pic. Then Greeks started buying fish and chip shops, and they started buying different chips. Then Chinese started buying them, and they started using chips that looked like they were from the supermarket. I miss the days when they'd wrap it in newspaper or that grey wrapping paper. Now they give it to you in a cardboard box. Haven't been to a fish and chip shop in person for years, I don't even want to think about who's running my local one now.
