Environment dependent. If you're humid year round you've got enough moisture in the air. If you're in Arizona you're probably going to have to spritz outside of monsoon season.

have you tried cold brew? if you're forced to drink drip pot coffee all day at work where theyre brewing it strong or burning it i can see why you'd say it's bitter. cold brew may be more your speed since it can be smoother, with a thinner body and no chance of it being burned. you can also make it at home really easily and add whatever you want like syrups or milks or creamers. easier to carry a bottle of it with you too since it doesnt need to stay in a double walled vaccuum sealed medical grade stainless steel cup.

Sounds good and I'm sure it is legit. Its a shame actually because there are definitely still some great Colombian producers out there but I just can't be bothered to try to find the green wholesaler descriptions to double check anymore. There is also the recent issue where Colombians are importing and then selling as Colombian coffee.
I also don't know if they will get it under control but I hope something has got to give eventually. There are a lot of things that can make it happen. James or Lance making a video about it(very doubtful esp after the recent vid James put out) is one option, more scandals like what happened with Perc(which after they got caught they started labeling only about 1/3 of their adulterated coffees properly and everyone came out thanking them for the transparency so not looking good on that front either) so I think that just leaves someone getting injured from an undisclosed allergen or the US, Can, and EU govt wise up to the issue because normal green beans have exemptions that make it much cheaper to import than coffee with adjuncts like flavorings and these producers would get their asses handed to them if anyone in those Govts had any idea what was going on.

and LITERALLY what we said in this general that it was best at and what its use case was.
i brew 15, 20 even 30g in it and make a tasty cup. but those doses will be brewed better on a v60.
its extremely hard to get a good sub 10g dose to taste good on regular brewers.
its not the pinnacle of brewing, but if you only have or only want to brew 9ish grams of coffee then you wont find a better brewer than the d27(or maybe that funnex thing, idk i havent used it)
so i think you may be using it wrong.
maybe you just dont like the profile.
grind up 2 9g doses at the same setting and brew them at the same time, 1 in the d27 and the other in a v60 and use the same amount of water and see which tastes better.

Coffee doesn't flow through(the center of) the holes, it flows around the edge of the holes. Those different screens give varying contact area for the filter to sit on. Bunch of tiny holes? Extremely quick. Way more "options" for coffee to flow out. Three big holes(or center hole v60, kalita etc) coffee clings to filter and runs out to those fewer contact points. The ass end of a v60 filter swells and clogs around that exit, hence why all the new cones(CE Vector, Origami Pinn etc) are seeking to optimize those contact points.

I'm reading the prescribed method for brewing in a clever dripper and it sounds like it was made up as a joke by someone here.

I have ~1kg of bad, old, brittle coffee beans. Pour-over and french press have both tasted overly bitter and not of much else.

What do you recommend to make them more drinkable? Obviously I've already tried adding milk and sugar after brewing but I'd like to know if there's anything else. Id prefer not just throwing them away but...it just tastes bad.
