Salt1 ½ Sticks of Unsalted Butter, cold, cut into ½” cubes1 ¾ c. Solid Shortening, cold, cut into ¾” cubes1 Egg1 T. White or Cider VinegarIce Water Mix flour, sugar and salt. Cut in butter and shortening using a pastry blender. Beat egg in a measuring cup, add vinegar, and add enough ice water to bring total liquid to 1 c. Pour liquid mixture over flour mixture and stir together until dry ingredients are evenly moistened and the dough can clump together. Do not mix more than necessary. Pour dough out onto a work surface and press together into a smooth ball. Cut ball into quarters, and shape each portion into a round disk. Wrap each disk in plastic wrap and refrigerate at least 2 hours before rolling out (or freeze for later use).

Roll out pie dough, place in pie pan, pierce all over with a fork and weight with rice, dry beans, or pie weights. (Use foil or parchment paper to keep rice/beans from touching the crust itself.) Partially bake (5-7 minutes). Cool crust while preparing filling, and reduce oven temp. to 375. Combine eggs, sugar, salt, melted butter and corn syrup, beating thoroughly. Stir in pecans and vanilla or rum. Pour filling into prepared crust and bake 40-50 minutes at 375. When pie is done a knife inserted in the filling should come out clean.
