She parcooks different rices individually, combines them and steams them to finish for guests. Most she'll do on a regular night is tempered rice (cook plain rice, dump boiling hot ghee with spices and aromatics roasted in there on the rice and stirred throughout) but we mostly have it plain. Tempered rice goes with kebabs, though. Anything saucy/goopy generally gets plain rice and/or roti.
