>Customer orders fries with zero oil
>>
Would that even be fulfilled?
You'd need an oven for it and without the direct hot oil contact it will take quite a while.
A lot of effort for some fries, if actually fulfilled they will cost a lot more.

>Most users on Reddit agree that the secret to getting a crunch without oil relies heavily on prepping the starch correctly

I can make it at home in the air fryer with no oil, just cook the shit out of the fries til they start turning brown, they'll be nice and crispy
>>
>>22161525
you can just pat them with a paper towel, customer will never know
>>

they taste weird though. more like a potato chip.

Fast food restaurants have no variable classic "cooking" though. All products are exactly tailored towards exact procedures.
I bet they would not even have a stove and pan or an oven or air fryer ready if someone ordered that because the whole process is optimized without any alternative to throwing them in the oil.
The only place you could probably do that is a real restaurant, where fries are part of meals far less often.

I like it

Yes but do people really go to fast food spots asking for fries with no oil

>Customer orders salt with no fries

This is when you give the customers fries that are extra oily, Who cares if they have to complain, in order for the complaint to matter they would have to put their ridiculous request in writing and nobody would ever take it seriously.

>family of 8
>take up two booths
>youngest kid is allergic to soy
>call manager to locate allergen and vegetarian menu
>voicemail
>call district manager to locate that menu
>"just don't risk it"
>let customer know what few items do not contain soy
>even all the cookware and pans touch soybean oil all day every day
>customer insists i deep wash a pan twice and it will be fine
was paranoid the next few days i'd be fired or worse, kid had eggs and i had to reseason the skillet
>>
>>22162376
Wrong. Your manager will and you be fired the next day + blacklisted from working in food service forever
>>
>>22162378
Nothing would of happened even if they died. You're a line cook not doctor house lmao.
>>
If someone orders food thats not on the menu you can tell them to either order something from the menu or nothing at all
>>
>>22162378
Sounds like a pain but it was nice of you to put in that much effort for it
>>
>customer orders the meatball sub, hold the bread
>>

oil is usually so refined that all the protein is removed so it won't cause a reaction. people with peanut allergies can usually have peanut oil too. only the proteins cause an allergic reaction.
>>
>>22161836
Your frozen chips are already pre-fried, retard.

I make it from actual russet potatoes (sometimes baby goldens if I have leftovers to use up) fat boy
