this is a great debate. Both of them are good, and the best recommendation I can give is start the day with stainless steel. See how good you can make those eggs. Let me see if you could make the pan have some globs of water balls, and a frying egg for me, and then at the end of the night you could fry either a piece of fish or a steak of your choice, and that’s my recommendation. Both are good. I would start the day with stainless steel and end it in the cast-iron. Both are very versatile and both very good. Cast-iron can go in the oven like stainless steel. The only thing with stainless steel is it separates the little kids from the big boys.

The high end of medium low makes perfect sense
The burner goes like this:
High <- Medium High <- Medium <- Medium Low <- Low
The "High end of Medium Low" means the cusp of Medium Low right before it becomes Medium. If he said "the Low end of Medium Low", it'd be at the lower cusp.

Only ever do steaks in cast iron.
In fact haven't used my stainless in a while ): cast iron is also easy to clean but bad for cooking sticky foods if you don't wanna use a lot of oil
